Apple Spice Drops

Pin It Now! I love summer. And I love June - It's when my precious apples are ready to be harvested! This year I am savoring every harvest moment because it will be my last summer to pick my apples. I will surely miss my sweet Anna and lovely Dorset. :(

With my first little harvest of the season I made Apple Spice Drops ~ a very delicious, soft frosted cookie!






Ingredients:

1/2 cup butter, softened
2/3 cup sugar
2/3 packed brown sugar
1 egg
1/4 cup apple juice
2 cups all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. ground nutmeg
1 cup finely chopped, peeled tart apple
1 cup chopped walnuts

Frosting:

1/4 cup butter, softened
3 cups powdered sugar
1 tsp. vanilla extract
3-4 TBS apple juice

Directions:

In a mixing bowl, cream butter and sugars. Beat in egg and apple juice. Combine dry ingredients, and gradually add to creamed mixture. Fold in apple and walnuts. Drop by spoonfuls about 2 in. apart onto greased cookie sheets. Bake at 375° for 12-15 minutes. Remove to wire racks to cool.

For frosting:  cream butter, sugar, vanilla, and apple juice to achieve spreading consistency. Frost cooled cookies.

Makes about 3 1/2 dozen depending on size. I like to make mine a little big, so it makes less.

Stopping by from the Crew! I love apples, but to me, they say fall, not summer! I guess it's because I've always lived in more northern areas where apples aren't ready until the end of August. Apple season to me means back-to-school, hay rides, bonfires on cool nights with hot cider, crispy crunchy leaves...
